2016 Pascale Pinot Noir

In 2016 we experienced a warm January that advanced bud break. A relatively even growing season followed welcome winter rains that helped to alleviate the years of drought. A cool summer allowed for long hang time and ideal phonological ripeness. We harvested just over a ton of fruit in the end of September. The fruit was picked and cold soaked for one week before warming up to let the native yeast fermentation begin which included 50% whole cluster fruit. After fermentation the wine was gravity fed into 50% new 50% neutral French Oak Barrels where it aged for 16 months before bottling.

This wine can be enjoyed now and but is cellar worthy for years to come.
